Grape Basil Lime Mojito

100 g sugar
100 ml water
200 g white grapes
3 sprigs basil, leaves removed
2 limes
100 ml Floating Dutchman White Rum
Ice
Extra basil for garnish
Frozen Grapes for garnish
Brûléed lime slices (sprinkle some sugar on lime slices and using a blowtorch burn the sugar until brûléed)
In a saucepan over medium heat, the sugar and water until the sugar has dissolved. Remove from heat and add 5 chopped basil leaves and the grapes. Cool completely and then blend in a high-speed blender till smooth. Pass the mixture through a sieve until you are left with the grape and basil syrup. Crush enough ice for 4 glasses. In the bottom of the glass add the rum and juice of two limes divided between the glasses. Top with crushed ice and then top with the basil, grape syrup. Served garnished with frozen grape sticks, more fresh basil, and brûléed lime slices.
